Kadhi-Bari

Soft gram-flour dumplings in a tangy yogurt-and-besan gravy, ladled over rice.

Kadhi-bari is comfort in a bowl — fried gram-flour dumplings (bari) simmered in a gently soured gravy of yogurt thickened with besan, tempered with mustard seeds and chilli. Ladled over hot rice, it is a staple of the everyday Maithil meal.

A simple method: whisk yogurt and besan smooth; bring to a simmer with turmeric, salt and a mustard-seed tempering, stirring so it doesn’t split; meanwhile fry small besan dumplings until golden and fold them in to soak up the tangy gravy. Finish with a final tempering of red chilli in ghee.
